Clay Pot Roast Chicken

Whole chicken with awesome flavors and veggies baked in a Clay Pot

1 5lb whole chicken
1 large cup of baby carrots
2 stalks of celery cut into 5 or 6 inch sticks
1 large red onion cut into quarters
6 or 7 whole baby portabella mushrooms
1 lemon, halved
4 tbsp butter, room temperature
springs of fresh thyme
springs of fresh parsley
springs of fresh rosemary
(I usually just eyeball the amount of herbs
depending what is available in my little herb garden)
2 cloves garlic, minced
1/2 cup white wine
1/2 cup chicken broth

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
