These Coconut Lime Cupcakes are moist with tons of coconut and lime. I love the addition of the toasted coconut to the top of the creamy Cream Cheese Lime Frosting.

For the Coconut Lime Cupcakes:
3/4 cup butter, room temperature
1 cup granulated sugar
zest of 1 1/2 limes
3 eggs, room temperature
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup buttermilk
4 ounces sweetened shredded coconut
3 ounces sweetened, shredded coconut, lightly toasted, garnish (optional)
For the Cream Cheese Lime Frosting:
1 (8 ounce) cream cheese, room temperature
1/2 cup butter,room temperature
1 teaspoon vanilla extract
zest of 1 lime
4 cups confectioners' sugar
green food coloring (optional)
