Easy coconut milk chicken curry with sweet potatoes. This recipe is amazing!

1 pound chicken breast - cut into thin bite-sized pieces
2 cans coconut milk
1 cup water
2 - 5 tablespoons red curry paste
1 jalapeno - seeded and thinly sliced
2 sweet potatoes - peeled and cut into small bite-sized chunks
1 green bell pepper - seeded and cut into bite-sized chunks
6 tablespoons soy sauce
2 tablespoons brown sugar
½ onion - peeled and cut into bite-sized chunks
1 can bamboo shoots - drained
