Coconut Pancakes

Coconut pancakes tempted me from a really long time, especially I love coconut and I wasn't disappointed when I added it also to the pancakes. Pancakes are tender and fluffy and the flavour of coconut gives them an exotic bite. For me they are bulls-eye.The recipe is extremely simple and fast. I strived to choose healthy ingredients but if you can modify the recipe, for example using sugar instead of maple syrup or wheat flour instead of oat flour. The amount of servings depends on the size of your pancakes.

140 grams yogurt
3 tablespoons oat flour
2 teaspoons maple syrup
3 tablespoons coconut shreds
1/2 teaspoon baking powder
3 tablespoons oat flour
2 teaspoons maple syrup
3 tablespoons coconut shreds

- Mix all ingredients on smooth paste.
- Slather the pan one time with healthy oil and pour the dough on the pan.
- Fry pancakes until they get to colour, then turn around.
