Coconut, Poppyseed and Lemon Drizzle Muffins

Lemon and poppyseed are one of my favourite combinations to have in a cake or muffin in the case. I decided to amp it up this time with coconut!

12 muffins
200 g of self raising flour
2 lemons zested
200 g of caster
4 eggs
200 g of yoghurt
1 tsp. of vanilla extract
100 g of desiccated coconut
25 g poppyseeds
220 g of icing sugar
2 tablespoons of fresh lemon juice
  1. Pre-heat your oven to 180 degrees Celsius. (350 degrees C)
  2. Get a 12 case muffin tray and place 12 paper muffin cases into the tray.
  3. Cream/beat the butter and sugar until the mixture...
