Coconut Sugar Caramel Apple Gingerbread Loaf (gluten free)

I large apple ( half sliced finely, the other chopped into small pieces )
100 g (7 tablespoons) butter ( softened )
60 g coconut sugar ( 1/3 cup + 1 tablespoon )
40 g (1/4 cup) raw brown sugar
130 g (1/2 cup) light syrup ( golden )
40 g (1/6 cup) dark syrup ( treacle )
175 g gluten free flour ( gluten free flour )
1 teaspoon baking powder
3 teaspoons ground ginger
1 teaspoon cinnamon
1 tablespoon milk
Pinch of salt ( if your butter is unsalted )
!Caramel Sauce:
60 g ( 1/3 cup + 1 tablespoon coconut sugar )
1 tablespoon honey
1½ tablespoons milk
