1 Double 8 Cattle Company Fullblood Wagyu Underblade Steak
16 Corn Tortillas
6 oz. Queso Fresco Cheese ( crumbled )
1 Yellow Onion ( sliced in rings )
2 Poblano Peppers
Coffee Marinade:
2 cup Brewed Coffee
2 tbsp. Molasses
3 tbsp. Dark Brown Sugar
2 tbsp. Unsweetened Cocoa Powder
2 tsp. Cumin ( ground )
1 tsp. Coriander ( ground )
2 tbsp. Ancho Chile Powder
2 Garlic Cloves ( chopped )
2 tsp. Kosher Salt
Mango-Avocado Salsa:
1 Champagne Mango ( small, diced )
1 Large Ripe Avocado ( small, diced )
1 Small Red Onion ( small, diced )
2 Garlic ( minced )
2 Roma Tomatoes ( small, diced )
1/2 cup Cilantro ( minced )
1 Jalapenos ( minced )
1 Limes ( juiced )
to taste Kosher Salt
to taste Freshly Ground Black Pepper
