Homemade coffee pudding

5 egg yolks
1 1/2 cups half and half
1/2 cup freshly brewed strong coffee, slightly cooled
3/4 cup granulated sugar
1/4 cup cornstarch
3 tablespoons unsalted butter, cubed

This Persimmon Banana Chia Pudding recipe is so healthy and 100% vegan, gluten-free, dairy-free, and most of all the tastiest one I've ever made :).

1.5 tablespoons chia seeds
1/2 banana
1/3 cup (70 ml) of unsweetened non-dairy milk
