Cold zucchini soup recipe

A great alternative to the gazpacho soup! This soup is done under 15 min and doesn't require a ton of ingredients. Easy recipe to follow.

2 zucchini ( chopped )
1 shallot ( chopped )
2 cups Chicken stock
1 handful coriander ( chopped )
4 sticks thyme ( fresh )
1 clove garlic ( minced )
3 tablespoons olive oil
2 slices Soft cheese (laughing cow)

- In a small pan on medium heat, heat up your olive oil. Once heated add your shallots and wait for them to get translucid before adding your coriander , garlic and thyme.
