Corn Salad with Easy Lime Vinaigrette

This delectable corn salad brings it all together with fresh corn, sweet red bell peppers, sun ripened tomatoes, cilantro, minced jalapeno, chopped scallions and feta cheese all in a lightly sweetened lime vinaigrette.

Lime Vinaigrette:
3 tablespoons fresh lime juice
1/2 tablespoon honey
1/8 teaspoon ground cayenne pepper
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1/8 teaspoon salt
1/8 teaspoon fresh ground black pepper
2 tablespoons olive oil
Corn Salad:
5 ears of corn shucked and de-silked
2 tablespoons sugar
1 tablespoon lemon juice
1 red pepper cut in small dice
1 cup grape tomatoes halved
1/4 cup chopped cilantro
1/4 cup chopped green onions
1 jalapeno minced (seeds and veins removed)
1/2 cup feta cheese
1/4 cup thinly sliced red onion

This green bean salad is made with fresh green beans, tomatoes, feta cheese and olives, all tossed in a Greek style dressing. An easy and satisfying salad that's full of bright flavors and colors.

For the salad::
1 lb green beans ( trimmed and cut into 2 inch pieces )
1 cup cherry tomatoes ( halved )
1/4 cup red onion ( thinly sliced )
1/2 cup feta cheese ( crumbled )
1/3 cup kalamata olives ( sliced )
1/4 cup chopped fresh herbs ( such as dill, parsley, chives and or basil )
For the dressing::
1/4 cup olive oil
1 tsp Dijon mustard
2 tbsp red wine vinegar
1 tbsp lemon juice
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 tsp dried oregano
salt and pepper to taste

2 package collard greens
750 g mince meat
185 g rice
2 pieces onion
100 g spinach
2 jars sorrel
50 g smoked bacon
2 teaspoons sea salt
2 teaspoons ground pepper
1 teaspoon sweet paprika
1 tbsp vegetable mix for soups
1 handful dill
