1 Using a zesteur, remove the zests of lemon.
2 Mix the goat cheese with the mint, the zests of lemon and a dash of olive oil.
3 Fry the lamb in a net of olive oil, 30 seconds on high heat, add salt and pepper lightly.
4 Spreads the lamb with the mixture goat-mint-lemon, sprinkle with almonds and spend 3 to 5 minutes under the grill of the oven.
