Couscous Salad

Couscous salad is so good to take to any summer gathering. I've made it using all sorts of different veggies.

Dressing:
1/4 cup sugar
1 t dried minced onion
1/8 t paprika
2 T white wine vinegar
2 T cider vinegar
1/4 cup oil - I use evoo
salt and pepper

Salad:
2 cups cooked couscous - cooled
1/3 cup diced red pepper
1/3 cup green onions, thinly sliced
1/3 cup crumbled feta cheese
1/3 cup dried cranberries
Mix salad dressing. Set aside Mix couscous and rest of ingredients. Top with 1/2 to 3/4 salad dressing and mix again. Adjust dressing as needed. Chill and serve. You can top with remaining dressing right before serving if you think it needs a bit more. I've also used cucumbers, tomatoes and fresh baby spinach in this with great results.
