With the addition of oats and coconut, Cowboy Cookies are heartier than your typical chocolate chip cookie. If you want to make them even more sinfully delicious, you can add in toffee pieces!

1 c. brown sugar
1 c. white sugar
2 eggs
1 tsp. vanilla
2 c. oats ( rolled or quick-cooking )
2 c. flour
1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 c. shredded coconut
2 c. chocolate chips
1 c. chopped nuts ( optional )
