Deliciously soft and chewy oatmeal cookies with dried fruit.

1 cup diced dried apricots, about 1/4 inch pieces
2/3 cup dried cranberries
2 cups (2 tablespoons) all purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground cloves
2 1/2 cups old fashioned rolled oats
1 cup (2 tablespoons) unsalted butter, room temperature
1 1/4 cups packed light brown sugar
3/4 cup (2 tablespoons) granulated sugar
1 teaspoon vanilla extract
2 eggs, room temperature
2/3 cup dried cranberries

In a small bowl combine the diced apricots and cranberries. Pour very hot water over the dried fruit until completely covered with water. Let stand for about 15 minutes.
