Extraordinarily soft, fluffy muffins with pockets of tangy cranberry, sweet white chocolate and a divine drizzle of rich white chocolate glaze, these cranberry white chocolate muffins are the perfect accompaniment to your breakfast or brunch.

4 Tbsp (1/4 cup, or ½ stick) (55 g) unsalted butter, melted
¼ cup (60 ml) canola oil (vegetable oil would also work)
1 cup (200 g) granulated sugar
1 egg, lightly beaten, + 1 egg white
1 tsp (5 ml) vanilla extract
¼ tsp (1 ml) almond extract (optional)
¾ cup (177 ml) buttermilk (or ¾ cup milk + 2¼ tsp vinegar, stirred together and allowed to sit 5 minutes)
2¼ cups (281 g) all-purpose flour
2 tsp (10 g) baking powder
½ tsp (2.5 g) salt
1 heaping cup (150 g) frozen cranberries
½ cup (85 g) white chocolate chips
Glaze
1 cup (170 g) white chocolate chips
¼ cup (59 ml) heavy cream
