Creamy Bacon Guacamole Potato Bites

Tender roasted baby potatoes are topped with bacon-laced guacamole to create these fun & festive creamy Bacon Guacamole Potato Bites ~ just perfect for Cinco de Mayo, game day, or party time snacking!

18 baby yellow potatoes {about 1 1/2 lbs.}, washed & halved lengthwise*
1 T. extra-virgin olive oil
1/4 tsp. sea salt
2 avocados, peeled and cubed
1 (1.2 oz) packet Concord Foods Guacamole Mix
1/2 c. sour cream
1/4 c. finely diced tomato
4 slices bacon, cooked & crumbled
1 T. chopped parsley or cilantro {optional}
