3 cups Romaine Lettuce, Chopped
3 cups mixed spring greens
1 1/2 pound chicken breast, chopped or shredded (store bought rotisserie chicken is fine)
1 piece avocado, chopped
1/4 cup goat cheese, crumbled
2 pieces whole large Roma tomatoes, coarsely chopped
1/2 cup toasted almonds, coarsely chopped
1 cup cooked corn (either cut from the cob or frozen)
1 cup dates (12-14 whole dates, sliced)
1 cup cornbread croutons
FOR THE VINAIGRETTE:
1-1/2 tablespoons Dijon mustard
1/4 cup freshly squeezed lemon juice
1 teaspoon apple cider vinegar
2 teaspoons honey or pure maple syrup
2 pieces small cloves garlic, finely minced
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
3/4 cup extra virgin olive oil
1/2 teaspoons kosher salt
1/4 teaspoon freshly ground black pepper

FOR THE SALAD:

  1. Add all of the salad ingredients to a large mixing bowl.
