4 sweet potatoes
2 large carrots
5 medium parsnips
3 tablespoons ghee
2 garlic cloves, minced
½ medium onion
1 tablespoon olive oil
1 teaspoon of ginger
½ cup water
Coarse salt
Freshly ground pepper
