Creamy Pea Salad

This easy Creamy Pea Salad is one of our favorite summer dishes. It combines sweet peas, crispy bacon, red onion and cheddar cheese in a creamy five ingredient dressing. This tasty salad comes together in less than ten minutes and it is a favorite at family reunions, potlucks and picnics.

1/3 cup sour cream
1/4 cup mayonnaise
1 tablespoon apple cider vinegar
1/4 teaspoon sea salt
1/4 teaspoon fresh ground black pepper
16 ounces frozen sweet baby peas thawed
1/4 cup finely chopped red onion
3/4 cup sharp cheddar cut in very small cubes
6 slices smoked bacon cooked crispy finely chopped

3 slices thick cut bacon
1 small Vidalia onion
2 cloves garlic
2 15.5 oz cans diced tomatoes
1 T sugar
2 t fresh thyme leaves
1 dried bay leaf
1/2 t apple cider vinegar
1/2 t Worcestershire sauce
2 c fresh or frozen okra
salt and pepper ( to taste )
