Creamy Pesto Salmon
This creamy pesto salmon comes together in about half an hour, making it the perfect weeknight meal. Pan-seared salmon is combined with a quick homemade pesto, roasted cherry tomatoes, a hint of cream, and roasted pecans.
1/2 cup pecan halves
1 tablespoon avocado oil
1/8 teaspoon crushed red pepper
2 cups cherry tomatoes
1/4 cup heavy cream
1/4 cup grated romano or parmesan cheese
1 juice lemon
2 cups spinach, packed into measuring cup
1/4 cup basil leaves, packed into measuring cup
3 tablespoons of olive oil
3 cloves of garlic
1 tablespoon mixed nut butter
1/2 teaspoon black pepper
1/4 teaspoon salt
1) Remove salmon from the refrigerator and allow to come to room temperature.
