Creamy Pumpkin Soup

2 large onions
3 cloves garlic
2 t grated fresh ginger
3 cans pumpkin puree ( 15 ounces each )
1 c apple cider
2-3 c vegetable broth or chicken broth
1-2 c heavy cream or coconut milk
