Creamy Red Wine Chicken Pasta

Full of flavorful thyme, seasonal mushrooms and full red wine, this cosy pasta is the perfect way to kickstart fall!

4 tablespoons butter (divided)
1 yellow onion, finely chopped
3 garlic cloves, in one piece but slightly crushed
300 g white button mushrooms, chopped
200 g chanterelles, chopped
0.2 liters red wine
0.25 liters cream
1 tablespoon concentrated chanterelle stock, or other mushrooms stock
5 fresh thyme sprigs
500 g chicken, cut in bite-size pieces
250 g fresh tagliatelle, cooked 1 min less than instructions
0.2 liters pasta water
0.1 liters fresh grated parmesan
