1 tablespoon high-heat cooking oil
1 garlic clove, minced
3/4 cup chicken stock
3/4 cup coconut milk
1/4 cup puréed mango
2 tablespoons freshly squeezed lime juice
1/4 cup sugar
2 tablespoons rice or white vinegar
2 tablespoons all-purpose cornstarch mixed with 2 tablespoons water
