If you love potatoes and even more fried, then these cheesy potato pancakes are calling you! They are crispy on the outside but when bitten into, smooth and creamy on the inside.

2 cups leftover potatoes, mashed
1 Tablespoon onion powder
2 cloves garlic, minced
1 cup white cheddar cheese, shredded
1 cup flour
1 egg, beaten
2 green onions, chopped
oil, for frying
salt and pepper to taste
