Super crispy roasted potatoes with pancetta and parsley.

2.5 pounds Yukon Gold potatoes
Kosher salt and black pepper
3-4 ounces pancetta, diced
2 tablespoons olive oil
1/4 cup minced flat-leaf Italian parsley
