Crock Pot Baked Potato Casserole

Thinly sliced potatoes are loaded with cheese and bacon and cooked in a crock pot.

2 1/4 pounds russet potatoes, thinly sliced
1 small yellow onion, diced
1/2 pound bacon, cooked and crumbled
12 ounces shredded cheddar cheese
2 cloves garlic, minced
4 tablespoons unsalted butter, melted
sour cream

Spray the inside of a crock pot with cooking spray.

Place the potatoes slices into the crock pot and top with the onion, bacon and 8 ounces of the cheese. Gently stir to combine everything...
