Crock Pot Cheesy Ham Chowder

Creamy and filling soup, perfect for leftover ham.

1 1/2 pounds russet potatoes, peeled and diced into 1/2 inch cubes
20 ounces frozen corn, thawed
4 cups cubed ham steaks, diced into 1/2 inch cubes
1 large yellow onion
4 ribs celery, diced
5 cloves garlic, minced
1/2 teaspoon black pepper
4 cups low sodium chicken broth
2 cups whole milk
2 tablespoons cornstarch
2 cups shredded cheddar cheese
1 cup sour cream
1/2 tablespoon dried parsley
  1. In a crock pot add the diced potatoes, corn, diced ham, diced onion, diced celery, minced garlic, black pepper and chicken broth. Stir everything together.
