Crock Pot Pineapple Pork Chops

4 looin or shoulder chops ( 3/4-inch thick )
salt & pepper, to taste
1 cup drained pineapple chunks ( save the syrup )
3/4 cup pineapple syrup
1/4 cup honey
2 Tbsp wine vinegar
1 Tbsp soy sauce
1/2 tsp. ground ginger
2 green onion ( sliced )
1 green pepper ( cut in thin strips )
salt & pepper, to taste
