Crock Pot Vegetable Soup

Prepare a big batch of Crock Pot Vegetable Soup for a healthy dinner that will make you feel good from the inside out! The old-fashioned vegetable soup is just like Grandma used to make!

3 carrots
3 ribs celery
2 russet potatoes
1 zucchini
2 c frozen cut green beans
28 oz petite diced tomatoes
1/4 c chopped fresh parsley
2 T minced fresh garlic
2 T tomato paste
2 bay leaves
1/2 t dried thyme
1 t salt
1/4 t black pepper
6 c vegetable broth
1 c frozen peas
1 c frozen corn
