This Italian meatball soup is tender beef meatballs, vegetables and pasta, all simmered in a rich tomato broth. An easy dinner option that's perfect for a busy weeknight!

For the meatballs:
1 lb ground beef ( I use 90% lean )
1 tsp minced garlic
1 tsp Italian dried seasoning
1/2 tsp dried parsley
1 egg
1/3 cup parmesan cheese ( finely grated )
1/3 cup Italian breadcrumbs
1/2 tsp salt
1/4 tsp pepper
cooking spray
For the soup:
2 tsp olive oil
1/2 cup onion ( finely diced )
2 stalks celery ( sliced )
2 carrots ( peeled and diced )
15 ounce can crushed tomatoes ( do not drain )
16 ounce can of tomato sauce
6 cups beef broth
1 tsp dried Italian seasoning
to taste salt and pepper
3/4 cup dried short pasta ( such as ditalini )
2 tbsp fresh parsley ( chopped )
parmesan cheese ( for serving )

1 package tater tots
2 cups pot roast, shredded
16 oz. Velveeta, cubed
1 can Ro-tel, undrained
1/2 cup sour cream
1 avocado, diced
1/4 cup pickled or fresh jalapeno, diced
