With four cucumber plants doing very well in this summer’s garden, I figured I’d better come up with some different ways to use them so they don’t go to waste; I can’t eat them all by myself, even if I do love snacking on cuke slices … and I don’t pamper myself enough to add them into a facial routine. 1/2 c. sour cream
1/2 c. softened cream cheese
4 oz. can of baby shrimp, drained
3/4 c. peeled and diced cucumber
1/4 c. diced scallion
1 tbsp. dill weed or fresh dill
1/2 tsp. garlic salt
1/8 tsp. pepper
1/2 c. softened cream cheese

Stir together sour cream and cream cheese until thoroughly mixed.
Add remaining ingredients and mix well.
Allow to chill for 4-6 hours (overnight is even better) before serving.
Serve with crackers or toasted bread.
