2 tsp oil
1 onion
3 red potatoes
2 carrots
2 celery ribs
4 cloves garlic
1 tbsp minced ginger
1 tbsp curry powder
1 can full-fat coconut milk
1 head cauliflower
1 tbsp soy sauce
1 1/2 cups water
2 tbsp lime juice
