Curried Pumpkin – The sweetness of pumpkin when combined with ginger and spices makes for the perfect side to any veg Indian recipe.

4 as a part of a meal
2 cups diced pumpkin ( about ½ a small orange pumpkin )
1/2 teaspoon cumin
1/2 teaspoon fenugreek (optional)
1 tablespoon grated ginger
3 tablespoons onion (about ½ a small onion) ( finely chopped )
2 green chilies ( whole )
1/2 teaspoon salt
1/2 teaspoon turmeric
1/4 teaspoon red chili powder
2 tablespoons coriander stems ( chopped )
1/2 cup water
1/2 teaspoon sugar
chopped coriander ( for garnish optional )
2 tablespoons vegetable oil
