Curry Potato Sushi

Why not roll up some Indian flavor?

1 tablespoon olive oil
2 teaspoon minced garlic
1 teaspoon minced ginger
1 teaspoon curry powder
¼ teaspoon paprika
¼ teaspoon salt
½ tablespoon lemon juice
2 cups chopped plain baked potato
1 cup cooked white rice
2 nori sheet
Heat olive oil in a small pan. Add garlic and ginger, sauté until fragrant. Add potato, curry powder, paprika and salt, stir and cook for 3 to 5 minutes. Turn off heat and add lemon juice. Lay out a nori sheet on a bamboo mat, spread ½ cup rice on about 2/3 of the nori sheet, leaving at least 1 inch edge from top. Spread half of the potato mixture on the rice. Stick few grains to the edge of the nori. Roll up the mat, tighten the content, and open the mat. Put roll on a cutting board, and cut into segments. Repeat above steps with the rest of the ingredients. Garnish with some paprika.
