Decadent High-Altitude Vegan Banana Bread

Delicious homemade vegan banana bread, include high-altitude and sea level instructions.

3 peeled very ripe bananas ( you can thaw frozen ones or ripen in the oven. )
1 cup walnuts, pecans or a mix of both ( lightly chopped )
1/2 cup cane sugar
1/2 cup maple syrup
1½ cups AP Flour ( lightly sift or spoon into measuring cup and then level with a knife )
1/3 teaspoon salt ( fine salt )
1 teaspoon baking soda
1 teaspoon ground cinnamon ( Ceylon is recommended )
1/3 cup coconut oil ( unrefined, virgin coconut oil is recommended you may need to liquify in a hot water sink bath )
1 teaspoon pure vanilla extract
1 flax egg ( 1 TBSP ground flaxseed a.k.a flaxseed meal mixed with 2½ TBSPs water )
