Delicious Chicken Curry

This week’s NutriPic recipe is here and I’m delighted with it! This chicken curry is packed with flavour, super easy to make and one of my favourite recipes, so ditch the take away this week and opt for my healthy, nutritious and delicious alternative. I’ve served mine with cauliflower rice and tried a new recipe with some small tweaks by adding cayenne pepper to give it a bit of a kick and topped it with hazelnuts and raisins. 4 chicken drumsticks (skin on)
1 tbsp. of coconut oil
1 large onion, sliced or chopped
2 cloves of garlic, finely chopped
1cm of fresh ginger, grated
2 tbsp. of tomato puree
2 large tomatoes
1 red chilli
2 handfuls of spinach
1 tsp. of ground cumin
1 tsp. of turmeric
1 tsp. of garam masala
1 tsp. of fennel seeds
2 cups/470ml water
Juice of 1/2 lemon

For the cauliflower rice?:

1 large cauliflower, grated using a grater or food processor
1 tsp. of coconut oil
1 tsp. cayenne pepper
2 tbsp. of water
1/2 tsp. turmeric for colour

Toppings: a small handful of chopped hazelnuts, a tablespoon of raisins and fresh coriander.
Heat the coconut oil in a frying pan, then season the chicken drumsticks with cayenne pepper and brown them for a few minutes on each side (until nice and golden). Remove from the pan and set to one...
