Tender and juicy smoked pork loin

6-8 lbs Pork Loin
Rub:
1.5 tsp Chili Powder
1/4 cup Paprika
1/4 cup Sugar
3 tbsp Cajun Seasoning
1 tbsp Salt
Brine:
2 tbsp Ground Black Pepper
1/2 cup Sugar
1/4 cup Salt
1/2 quart Apple Juice
1/2 quart Apple Cider Vinegar

1. Mix brine ingredients and add pork loin. Refrigerate overnight.

2. Mix rub ingredients in a bowl.

3. Take pork loin out of the brine and coat with spice rub. Rest for 1 hour.
