Dual Potato Salad (Vegan)

Decadently creamy and wonderfully tangy, you'd never know it was vegan!

For the salad:
1 (1/2 cup) sweet potatoes ( about 1 large sweet potato cut into bite-sized chunks )
2 cups regular potatoes ( about 4-5 medium-sized potatoes cut into similar-sized cubes )
2 handfuls fresh or frozen green beans ( cut into 2 or 3 pieces )
1/4 a red onion ( sliced as thinly as you can manage )
3 gherkins or dill pickles ( large )
For the vegan mayo:
2 tablespoons soy yogurt ( heaping )
1 teaspoon mild mustard ( small mine has a lot of different spices in it, including turmeric! )
2 teaspoons apple cider vinegar
2 tablespoons fresh herbs ( thinly chopped fresh herbs or 1 tablespoon dry. think parsley and chives mostly, but tarragon or even mint could be added if you like or if you want to switch things up )
1/3 teaspoon salt
freshly ground black pepper ( to taste )
  • In a large pot of salted boiling water, add the potato chunks
