Easy Avocado Chicken Salad

The crunch from the celery, the brightness of the lime and the bite of the garlic. And, let’s not forget the star of the show…the buttery avocado. It elevated my chicken salad to a whole new level!

2 cups chicken, cooked and shredded
1 avocado, cut into chunks
2 Tbsp onion, finely minced
1 clove garlic, finely minced
1 rib of celery, finely minced
1 Tbsp fresh parsley, minced
1/2 tsp salt
1/2 tsp pepper
2 tsp lime juice
1/2 cup mayonnaise
Add all ingredients to a medium sized bowl and stir to combine. Refrigerate for one hour to allow flavors to develop.
