This easy Apple Pecan Sweet Bread is full of apples chunks and pecans. It is lightly sprinkled with cinnamon pecan sugar giving it a light extra crunch on the crust. It is quick to come together and can easily be doubled.

1 3/4 cup all purpose flour
2 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 teaspoon baking powder
2 large eggs
3/4 cup sugar
1/3 cup vegetable oil
2 tablespoons applesauce
2 cups finely chopped peeled apples
1 cup chopped toasted pecans
1 tablespoon sugar for sprinkling the top

So this is probably our new favorite cake recipe, it is similar to some of the poundcake's we have done, however a more fruitier version, we have added some freshness in the form of blackberries and raspberries, full disclaimer there is 1 banana in this recipe, however, across 8 portions it's not the end of the world, this should be considered as a treat for all the hard work that you have done, plus each mini loaf is only worth 8g net carbs! If you aren't ready to treat yourself just yet, simply add an extra 1/3 cup of blackberries and an extra 1/3 cup raspberries.
