Easy Dinner in a Pumpkin

A delicious, hearty, casserole baked inside of a pumpkin. One of my favorite Halloween dinner traditions!

1 medium pumpkin or 2 smaller pumpkin pie pumpkins
1 lb ground beef
1/2 cup finely chopped yellow onion
2 cloves garlic, minced
1 cup diced carrots
1 cup diced green bell pepper
1/2 cup diced celery
2 cups cooked wild rice, brown rice or quinoa
For the Sauce:
1 1/2 cups low-sodium beef broth
1/2 tsp onion powder
1/4 tsp garlic powder
salt and pepper, to taste
1/8 tsp dried parsley
1/8 tsp paprika
1 cup milk
1/2 cup all-purpose flour
crushed red pepper, to taste
1 lb ground beef

Cut the top off of the pumpkin--cutting an opening about 5-7 inches wide. Clean out the seeds and insides of the pumpkin until the inner walls of the pumpkin are smooth.
