Easy Edamame Pesto Pasta

In under 30 minutes, make a healthy protein-packed pasta topped with edamame basil pesto.

1 cup edamame
6 cups spinach
1 basil
1/4 cup non-dairy milk
1/2 lemon
8 oz pasta
1 tsp oil
1 shallot
2 garlic

Bring a pot of salted water to a boil, and cook your pasta until al dente, following package directions. Reserve 1/2 cup of the cooking liquid, and then drain the pasta without rinsing it.
