Easy Green Curry with Chicken

2 small potatoes (peeled and cut into large cubes)
 
 
2 Tbsp cooking oil
 
 
1 chicken breast (or 2 chicken thighs) cut into bite-sized pieces
 
 
1 small yellow onion, sliced.
 
 
1 - 3 Tbsp green curry paste (1 = mild, 2 = medium, 3 = spicy)
 
 
1 can (14oz) coconut milk
 
 
1/2 cup green beans, cut into 1-inch pieces
 
 
1 small eggplant, cut into small pieces
 
 
1/4 cup sliced bamboo shoots (1 small can, drained)
 
 
2 Tbsp palm sugar or brown sugar
 
 
2 Tbsp fish sauce
 
 
1 cup Thai basil leaves
 
 
3 fresh Kafir lime leaves, stem removed, thinly sliced
