Easy Grilled Hawaiian Chicken Teriyaki Rice Bowls

Grilled marinated chicken, sweet juicy pineapple, sticky coconut rice and crisp grilled veggies. The combination of flavors gives an aloha-inspired dinner that is quick, easy and family pleasing!

For the Coconut Rice
2 cups water
1 1/2 cups canned unsweetened coconut milk
2 tsp packed light brown sugar
1 tsp salt
2 cups white rice
3 boneless, skinless chicken breasts, cut into strip or chunks (whichever you prefer)
2 zucchinis, sliced
8 mini sweet bell peppers, chopped (I use a variety of red, yellow and orange)
1 pineapple, peeled and cut into chunks
1 small red onion, sliced thin
1 jar of your favorite Teriyaki Sauce
