3 Cups Water
3 Cups Vegetable broth
5 Cups Cauliflower ( cut into bite sized pieces )
1 Tbsp Olive oil

1/2 Cup Onion ( roughly chopped )

For the meatballs:
1 Lb Ground chicken
1/2 Cup Mozzarella cheese ( grated )
1/4 Cup Green onion ( diced + additional for garnish )
1 tsp Salt
1 1/2 tsp Garlic ( minced )
1/4 Cup old fashioned oatmeal ( plus 2 Tbsp Rolled, gluten free if needed )
1 Tbsp Ranch dressing powder mix
Pinch of pepper
1 Large egg white
