Easy Instant Pot Minestrone

Minestrone is a nutritious soup that's filled with veggies and since it's made in the Instant Pot, you can enjoy it any night of the week.

4 oz Pancetta or bacon ( chopped )
1 tbsp olive oil
1 medium onion, chopped ( chopped )
2 medium carrots ( chopped )
4 ribs celery ( chopped )
1 red pepper ( chopped )
2 cups green cabbage ( shredded )
4 cloves garlic ( finely chopped )
1 tsp Italian seasoning
4 Roma tomatoes ( seeded and chopped )
1 quart chicken stock
1 quart beef stock
1 tsp salt
1/2 tsp pepper
1 (11 oz) can cannellini beans
1/2 cup elbow macaroni ( cooked for 8 minutes )
parmesan cheese ( for serving )
  1. Heat olive oil in the Instant Pot on the saute function, add pancetta or bacon and saute for about 10 minutes, until crsipy.
