Easy Quinoa Salad

This easy quinoa salad recipe may be simple, but it's definitely not boring. Make it as a side for a good summer barbecue dish or picnic or to complement some grilled kebabs.

2 cups uncooked quinoa
4 cups beef or chicken bone broth
5 ounces spring mix
1 pint cherry tomatoes, halved
1/4 cup extra-virgin olive oil
to taste Kosher salt
