Easy Skinny Quinoa Chili

A super easy weeknight skinny chili with quinoa.

1 lb. lean ground beef (grass fed)
1 small onion, chopped
3-4 garlic cloves, chopped
1 1/2 tbsp chili powder
3 tsp cumin
3 cans diced tomatoes (14.5 oz)
2 1/2 cups chicken stock
1 can kidney beans
1/2 cup uncooked quinoa
salt and pepper to taste
