EASY SQUASH CASSEROLE

I wouldn't normally day dream about squash casserole, but then there was this. The common version uses yellow squash, but zucchini works beautifully. This recipe is a must try!

4 cups zucchini, sliced thick, about 2 medium/large zucchini
1/2 cup chopped onion
35 buttery round crackers, Ritz!
1 cup shredded cheddar cheese
2 eggs
3/4 cup milk
1/4 cup butter, melted
salt and pepper to taste
2 tbsp more of butter, cut into small cubes

Place squash, onion, and a small amount of water in a pan. Place on your stove top and cook over medium heat for about 5 minutes, or until the squash is softened. You want this to be fork tender, not at all...
