Easy Summer Chicken Salad

Not your traditional chicken salad. Diced chicken served on a bed of broccoli slaw and cucumbers and peppers and doused in a tangy homemade dressing.
2 chicken breast, cooked (or grilled!) and cubed
12 oz broccoli slaw
1 cucumber, sliced
½ red pepper, thinly sliced
1 cup chopped scallions
¾ cup roasted, salted sunflower seeds
Dressing
¾ cup mayo (I recommend mayo with olive oil if you're looking for a slightly lighter dressing)
3 Tbsp apple-cider vinegar
3 Tbsp brown sugar
1 Tbsp milk
¼ tsp salt
¼ tsp ground black pepper
¼ tsp garlic powder
¼-1/2 tsp crushed red pepper (depends on how spicy you like your dressing, ¼ tsp gives a subtle hint while ½ tsp lends a stronger kick)
